Menu Plan Monday | Week of Sept 20

When we lived in Michigan, a lot of times it was cheaper to not plan meals, because you never knew what would pop up on sale. In Mississippi, none of the grocery stores available to us have sales that can beat Sam's Club, so I am back to menu planning. At least until our "rice and beans, beans and rice" gazelle intensity is not needed. (Ok, technically, it isn't needed now but we are so close to being able to scream that we are debt free, we are doing whatever we have to to make it happen as fast as possible!)

By the way... it was the boys who suggested we get all gazelle. In fact, last night Alex said "We need to be 'rice and beans, beans and rice' until it is gone!" When the kids are so on board, you don't pass up the opportunity! How funny that our "rice and beans, beans and rice" lifestyle really kicks in to high gear on Monday, which around here is Red Beans and Rice day.


All meals served with salad and fruit.

Monday: Red beans and rice

Tuesday: Grilled sirloin, corn on the cob, salad

Wednesday: Brats, sauerkraut

Thursday: Clean out refrigerator dinner and grilled chicken (If what is left will work as a soup or casserole, I will make it in to a soup. If not, I will grill chicken breasts and we will have the leftovers as side dishes.)

Friday: Pasta w/ focaccia (Sauce is home made, waiting in the freezer and focaccia is a GF Chebe mix we picked up in New Orleans to try.)

Saturday: Date night - Marty and I will take a picnic to the park and either make something quick for the boys, or feed them any leftover leftovers.

Sunday: Greek chicken, brown rice and vegetable skewers

I love beans and rice!!! I wish that we could be debt free, but we will be paying on the house until forever!!

wow yes it must be nice to have the kids "on board" with everything like that-but then again your boys are old enough to understand what debt is and that getting rid of it now will help in longrun....but it is easier when they agree LOL....great group of guys you have ;) I need to get into meal planning.....just don't feel that organized to do it....UGH...

A Krista with a K, even! Everyone wants to spell it with a Ch. Even when I was in Germany everyone spelled it with a Ch. :/

We love beans and rice here, too. There are so many ways you can change the flavor that you could serve them every day for a month and not have the same thing twice! Cheap and versatile. Just what I like!

Julie - It is easier, but we have always drug them along kicking and screaming in our debt free adventure. lol
